The baby sister of the Les Amis Group, Canelé Pâtisserie Chocolaterie celebrates its 1st anniversary with a ??BOMB? this 22nd September.
The Bomb is Executive Pastry Chef, Pang Kok Keong??s latest explosive offering. Made of mousse and chibouste (a very light custard), using Valrhona Grand Cru Manjari (64%), crispy pearls which are little round chocolate seeds coated with feuillitine, chocolate pain de gene (a traditional French almond cake) and dotted with flakes of fleur-de-sel, the Bomb is an unorthodox creation that ambushes one??s palate with a myriad of tastes and textures.
Once you bite through the bomb shaped chocolate shell, the crispy pearls explode in your mouth, triggering a decadent rush of pleasure that only the finest chocolate delicacies can evoke. This is only the beginning of the journey.
Indulge in other Canelé offerings like crunchy pearl truffles (70% St. Domingue dark ganache) or the crunchy pearl tablet bars (either 35% milk or 70% St. Domingue). The genesis of the pearl truffles, Saint Domingue dark chocolate ganache, gives a vinous fruity flavour, which is spicy and dense. The Manjari used for the bomb is a ??Grand Cru? chocolate with traces of Criollo, which is considered one of the rarest in the world. It offers powerful notes of cocoa, with hints of red fruits, is slightly tangy and exceptionally long on the palette.
